Gilbert Cuellar Sr. (1911-1986) is better known for his restaurants, El Chico, than for his community work. Cuellar, son of Mexican immigrants, attended school until the eighth grade. He worked in his family's restaurant until 1940, when he opened his first El Chico restaurant in Dallas. His humble beginning and his fight to achieve success were always part of the message that he shared during speeches at universities and in business meetings. His interest in our children's education and civic participation left an imprint on our city. Cuellar dedicated much of his life to help others reach success. Cuellar received many awards during his lifetime, including Honorary Admiral in the Texas Navy, 1977; Outstanding Restaurateur of the Year, Restaurants Association, 1983; and in 1984, the Special Award for Achievement and Exceptional Leadership in the Development of Minority Businesses by the Secretary of Commerce, Malcolm Baldridge.
